This side of town is colorful, artistic and now the home of Chef Salvador “Chava” Alvarado, the man who dared to introduce BIRRIA RAMEN to Asheville. Hey, if you know of another place with this dish let me know, but I can tell you that as a guy that eats out a lot, to me this is the very first place I have seen it in Asheville.
All right, as soon as I arrived at Andale Way, Chef Salvador invited me to his kitchen, and proceeded to fix me up with his version of one of the hottest trends in the country at the moment.
You see, this is no joke folks, birria ramen is so hot, it is featured in publications such as: The New York Times, Washington Post, and many others, because simply put, MEXICAN FOOD IS THE KING of all latin foods in the U.S. That’s right, you all, I like all latin foods, but everyone loves Mexican cuisine and this is a fact.
I have eaten plenty of birria, but this new version is BOMBASTIC, especially during a cold day. It is something you are going to thank me for sharing this with you.
